Ingredients

  • 8 cups sliced squash
  • 4 onions, sliced or chopped
  • 1 tablespoon mustard seed
  • 1 tablespoon celery seed
  • 2 bell peppers, chopped
  • 1/2 cup uniodized salt
  • 3 cups white vinegar

Instructions

  1. Combine sliced squash, chopped peppers, sliced or chopped onions, and salt in a large bowl.
  2. Cover with ice and water; soak for 3 hours.
  3. Pour off the water and rinse the mixture.
  4. In a saucepan, mix together vinegar, mustard seed, sugar, and celery seed; heat until the sugar dissolves.
  5. Add the soaked squash mixture to the vinegar mixture; boil for 3 to 5 minutes.
  6. Seal the hot relish in sterilized jars.
