Ingredients

  • 3 lb. watermelon rind
  • salted water (3 Tbsp. salt per quart of water)
  • 2 lb. sugar
  • 3 c. distilled white vinegar
  • 6 pieces stick cinnamon (3 inches each)
  • 2 Tbsp. whole allspice
  • 2 Tbsp. whole cloves

Instructions

  1. Cut the watermelon rind into 1-inch cubes, trimming off the outer green skin and bright pink flesh.
  2. Soak the rind in salted water (3 Tbsp. salt per quart of water) overnight; then drain.
  3. Combine sugar and distilled white vinegar in a pot and heat until boiling.
  4. Tie the whole spices (cinnamon sticks, allspice, cloves) in a cheesecloth bag.
  5. Add the spice bag and the drained melon rind to the boiling vinegar mixture. Cook uncovered until the rind becomes transparent, about 45 minutes.
  6. Discard the spice bag. If desired, add a few drops of red or green food coloring to the rind.
