  • 4 cups cubed potatoes

  • 1 small jar chopped pimentos
  • 2 tablespoons chopped onions

Instructions

  1. Cook the cubed potatoes until done and reserve the potato water.
  2. In a saucepan, melt the butter and stir in the self-rising flour and salt.
  3. Gradually add 1 cup of the reserved potato water and milk, cooking until the mixture is almost as thick as mashed potatoes, stirring constantly.
  4. Add the grated Cheddar cheese, chopped pimentos, and chopped onions, stirring well.
  5. Pour the cheese mixture over the drained potatoes and stir to combine.
  6. Cube the bread crumbs and pour the melted butter over them.
  7. Arrange the bread crumbs on top of the potatoes.
  8. Sprinkle with paprika and bake at 350°F until the top is crisp.
