Ingredients

  • 1 lb. Velveeta cheese
  • 1 (12 oz.) can evaporated milk
  • 1 (7 oz.) jar chopped pimentos
  • 1 c. grated Cheddar cheese
  • mayonnaise

Instructions

  1. Cut the Velveeta cheese into small cubes while still cold.
  2. Place the cheese cubes in the top of a double boiler set over hot water and allow it to melt.
  3. Stir in the evaporated milk and chopped pimentos when the cheese is melted.
  4. Cook over medium heat until the mixture is slightly thickened, about 30 minutes.
  5. Allow the mixture to cool, then add grated Cheddar cheese and mayonnaise to moisten and adjust taste.
  6. Use as a spread for sandwiches, filling for celery sticks, or serving with crackers.
