- Wash whole peppers.
- Place the peppers in an oven and roast for 6 to 8 minutes to loosen the skin.
- Dip the roasted peppers quickly in cold water, then peel and cut them up.
- Place the chopped peppers in jars and flatten them.
- Add 1/2 teaspoon of salt to each jar.
- Put the jars in a pressure cooker and process for 15 minutes at 10 pounds pressure.
- Add no liquid to the jars.
