Ingredients

  • whole peppers
  • cold water
  • 1/2 tsp. salt

Instructions

  1. Wash whole peppers.
  2. Place the peppers in an oven and roast for 6 to 8 minutes to loosen the skin.
  3. Dip the roasted peppers quickly in cold water, then peel and cut them up.
  4. Place the chopped peppers in jars and flatten them.
  5. Add 1/2 teaspoon of salt to each jar.
  6. Put the jars in a pressure cooker and process for 15 minutes at 10 pounds pressure.
  7. Add no liquid to the jars.
