Pineapple-Butterscotch Bars

Ingredients

  • 2 cups flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/3 cup shortening
  • 2/3 cup dark brown sugar, firmly packed
  • 1/2 teaspoon vanilla
  • 2 large eggs
  • 1 cup drained canned pineapple, crushed
  • 8 ounces butterscotch chips

Instructions

  1. Cream shortening and sugar; add eggs and vanilla, beat well.
  2. Combine all dry ingredients and sift.
  3. Add dry ingredients to creamed mixture.
  4. Stir in crushed pineapple.
  5. Add butterscotch, and fold in .
  6. Spread into greased 13 x 9" pan.
  7. Bake at 350°F for 30-40 minutes or until golden-brown (test using toothpick; bars are ready when toothpick comes out clean).
