Ingredients

  • 1 (20 oz.) can crushed pineapple
  • 1 can water
  • 4 or 5 eggs, separated
  • 1/2 cup + 2 tablespoons flour

Instructions

  1. Put pineapple and water in a 10-inch skillet; add egg yolks.
  2. Mix sugar and flour; cook until thickened.
  3. Pour the pineapple mixture into pie shells.
  4. Beat egg whites, gradually adding 2 tablespoons sugar for each egg used, and beat until peaks hold shape.
  5. Make sure the meringue touches all around the edge of the pie.
  6. Bake at 400°F until the meringue is golden brown.
