Ingredients

  • 2/3 cup cherry juice
  • 3/4 cup sugar
  • 1 1/2 tablespoons quick cooking tapioca
  • 2 1/2 cups canned pitted red cherries, drained
  • 3 or 4 drops almond extract
  • a few drops red food coloring
  • 1 tablespoon butter or margarine
  • pastry for 9-inch lattice top pie

Instructions

  1. Combine the juice from cherries, sugar, quick cooking tapioca, drained cherries, almond extract, red food coloring, and a dash of salt; let stand for 20 minutes.
  2. Line a 9-inch pie plate with pastry.
  3. Fill the pie with the cherry mixture and dot with butter or margarine.
  4. Adjust the lattice crust on top and crimp the edge high.
  5. Bake in a very hot oven at 450°F for 15 minutes.
  6. Reduce the oven temperature to 375°F and bake for about 45 minutes more until golden and bubbly.
