Ingredients

  • 2 pkg. lemon gelatin
  • 1 c. hot water
  • drained pineapple liquid
  • 1 Tbsp. vinegar
  • 1/4 tsp. salt
  • 2 1/2 c. drained and crushed pineapple
  • 1 c. grated carrots

Instructions

  1. Dissolve the lemon gelatin in hot water.
  2. Add additional water to the drained pineapple liquid to make 1 1/2 cups.
  3. Combine the pineapple liquid, vinegar, and salt with the gelatin mixture; chill until slightly thickened.
  4. Add the drained and crushed pineapple to the grated salted carrots.
  5. Fold the pineapple and carrots into the gelatin mixture.
  6. Chill until the gelatin is firm.
  7. Cut into squares and serve on lettuce leaves.
