Pineapple Grapefruit Salad

A refreshing fruit salad featuring tangy grapefruit and sweet pineapple, set in a delicate lemon gelatin, perfect for summer gatherings or light desserts.

Ingredients

  • 4 large grapefruits, sectioned
  • 2 envelopes gelatin
  • 2 Tbsp lemon juice
  • 1 small package lemon gelatin
  • 2 (No. 2 1/2) cans pineapple chunks, drained
  • reserved pineapple juice
  • 1/4 tsp salt

Instructions

  1. Soak the gelatin envelopes in lemon juice to soften.
  2. Heat the drained pineapple juice until it reaches a boil.
  3. Pour the boiling pineapple juice over the lemon gelatin and plain gelatin to dissolve.
  4. Allow the mixture to cool.
  5. Add pineapple chunks, grapefruit sections, salt, and sugar to the cooled gelatin mixture.
  6. Pour the mixture into pans or molds.
  7. Refrigerate several hours until set.
