  • 1 small carrot (optional)
  • 3 to 4 small chili peppers
  • 2 c. vinegar
  • 3 Tbsp. salt
  • 1 tsp. garlic salt or 1 clove garlic

  2. Put cleaned vegetables (cut in chunks) in a sterilized quart jar.
  3. Pour boiling liquid over vegetables, seal, let cool, and refrigerate.

Tips & Substitutions

For extra flavor, consider adding herbs like thyme or bay leaves to the vinegar mixture. If you prefer a milder pickled onion, you can soak the sliced onions in cold water for 30 minutes before adding them to the jar. Substitute the chili peppers with black peppercorns for a different spice profile. These pickled onions can also complement dishes such as Portuguese Rice.

Serving Suggestions

These Portuguese pickled onions are a delightful accompaniment to grilled meats, sandwiches, or tacos. They add a zesty crunch to salads and pair wonderfully with savory dishes such as Syrian Salad. For a refreshing twist, use them in a wrap or as a topping for burgers. Try serving them alongside I-Can-Help Orange Balls for a colorful spread.

Storage & Reheating

Store the pickled onions in the refrigerator in an airtight container. They will keep well for up to 2 weeks. There is no need to reheat them; they are typically served cold as a condiment or side. Enjoy them straight from the jar or as a topping for sandwiches and salads.
