Pineapple Ice Box Pudding

Ingredients

  • 2/3 c. melted butter
  • 1 tall can crushed pineapple
  • 1/2 c. white sugar
  • 1 box vanilla wafers, crushed
  • 1/2 c. pecans, chopped, or 1 c. if desired

Instructions

  1. Melt the butter.
  2. Remove from stove and add pineapple, sugar, crushed wafers and chopped nuts.
  3. Crush enough extra wafers to put a thin layer in bottom of pyrex dish.
  4. Pour mixture in dish and add a thin layer of crushed wafers on top.
  5. Place in refrigerator to cool.
  6. Serve in square blocks with Cool Whip if desired.
  7. This is enough for about 12 servings.
