Pineapple Lime Jello Salad

Ingredients

  • 2 small boxes lime jello
  • 1 medium can crushed pineapple, drained (reserve liquid)
  • 1 (8 oz.) cream cheese
  • 3/4 c. sugar
  • 3 eggs
  • 1 Tbsp. lemon juice
  • 1 large container Cool Whip
  • 3 Tbsp. cornstarch
  • 8 ice cubes

Instructions

  1. Add jello to 2 cups boiling water.
  2. Stir until dissolved.
  3. Add 8 ice cubes; stir until melted.
  4. Add drained pineapple.
  5. Chill until firm.
  6. In saucepan, add eggs, lemon juice and sugar.
  7. Add pineapple juice and water to equal 1 cup.
  8. Mix in cornstarch until thickened.
  9. Let cool and spread on jello.
