Ingredients

  • 2 cups crushed canned pineapple
  • 3 1/2 cups sugar
  • 1/2 cup pectin
  • 3/4 teaspoon mint flavoring
  • green food coloring
  • juice of 1 lemon
  • 2 teaspoons grated lemon rind

Instructions

  1. Mix crushed canned pineapple and sugar, stir well and bring to boiling point. Cook hard for 1 minute.
  2. Add green food coloring to achieve the desired tint.
  3. Remove from heat and add pectin, stirring well.
  4. Skim the mixture and allow it to cool, stirring often.
  5. Add mint flavoring and transfer into jars.
