Ingredients

  • 2 c. milk
  • 2 beaten egg yolks
  • 1 c. sugar
  • 1/4 c. water
  • 3 Tbsp. tapioca

Instructions

  1. Scald the milk.
  2. Add beaten egg yolks to the hot milk and mix well.
  3. Cook sugar and water until the syrup spins a thread.
  4. Pour the hot syrup slowly into the beaten egg whites, whisking constantly to create a meringue.
  5. Add the egg yolk and milk mixture to the syrup and egg whites, stirring gently.
  6. Stir in the grated pineapple and small marshmallows into the mixture.
  7. Make a meringue of egg whites and fold it into the mixture or serve as a topping.
