Pineapple Walnut Drops Cookies

Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. crushed pineapple, drained
  • 1 Tbsp. lemon juice
  • 1/2 c. shortening
  • 1 c. sugar
  • 1 egg

Instructions

  1. Mix flour, baking soda, baking powder and salt.
  2. Cream shortening; add sugar gradually.
  3. Add unbeaten egg.
  4. Stir in pineapple, walnuts and lemon juice.
  5. Add dry ingredients; stir well.
  6. Drop by teaspoon onto cookie sheet.
  7. Bake at 375° for 12 to 15 minutes.
  8. Yields 2 to 3 dozen.
