Ingredients

  • 1 quart pinto beans
  • 1 large ham hock or 1 lb bacon
  • 13 oz can tomato paste
  • 1 large onion, finely chopped
  • Salt and pepper to taste

Instructions

  1. Soak the pinto beans overnight in cold water.
  2. Next day, add ham hock or bacon, finely chopped onion, salt, and pepper to the beans.
  3. Cook until the beans are tender, about 2 hours, adding more water if they become dry, keeping the beans barely covered with water.
  4. Once the beans are cooked, stir in the tomato paste and adjust salt if necessary.
