Ingredients

  • 24 large marshmallows
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 6 drops red food coloring
  • 6 drops peppermint extract
  • 1 cup chilled whipping cream
  • 2 tablespoons crushed peppermint
  • pie crust

Instructions

  1. Bake the pie crust.
  2. Heat marshmallows and milk in a saucepan over low heat, stirring constantly, until marshmallows are melted.
  3. Remove from heat and stir in vanilla, salt, peppermint extract, and red food coloring.
  4. Refrigerate, stirring occasionally, until the mixture mounds when dropped from a spoon.
  5. Beat the chilled whipping cream in a chilled bowl until stiff peaks form.
  6. Stir the marshmallow mixture until blended, then fold into the whipped cream.
  7. Pour the filling into the baked pie crust.
  8. Refrigerate for at least 12 hours before serving.
