Ingredients

  • 1 lb. dry pinto beans
  • 1/4 lb. dry salt bacon
  • 3 Tbsp. garlic salt, divided
  • 1 Tbsp. ground black pepper or lemon pepper
  • 1 Tbsp. chili powder

Instructions

  1. Wash the dry pinto beans thoroughly.
  2. Place the dry salt bacon in a crock-pot and add the washed beans.
  3. Sprinkle 2 tablespoons of garlic salt over the beans.
  4. Cover with water until it is 1 inch above the beans.
  5. Let stand overnight or until the water is absorbed.
  6. After soaking, add water until 1 inch of water covers the beans.
  7. Add 1 tablespoon garlic salt, ground black pepper or lemon pepper, and chili powder; stir well.
  8. Cook on high setting of crock-pot for 1 hour.
  9. Add more water to keep the beans covered during cooking.
  10. Cook an additional 5 hours on low setting.
  11. Optionally, soak beans in beer for less gas.
