Ingredients

  • 1 catfish fillet (5 to 7 ounces)
  • 1 Tbsp. melted butter or margarine
  • 1 Tbsp. dry white wine
  • 1/2 tsp. lemon juice
  • 1/2 tsp. dried thyme leaves
  • 1/2 tsp. dried tarragon leaves
  • 1/2 tsp. paprika
  • salt
  • ground white pepper
  • parsley sprigs (optional)
  • lemon wedge (optional)

Instructions

  1. Place the catfish fillet in a medium-sized microwave-safe dish.
  2. In a cup, combine melted butter or margarine, white wine, lemon juice, dried thyme leaves, dried tarragon leaves, paprika, salt, and ground white pepper.
  3. Pour the mixture over the fish.
  4. Cover the dish and microwave on high (100% power) for 2 1/2 minutes or until the fish flakes easily with a fork.
  5. Rotate the dish one-quarter turn halfway through cooking.
  6. Garnish with parsley sprigs and lemon wedge if desired before serving.
