- Peel and grate the cooled potatoes; set aside.
- Sprinkle a little salt over the grated potatoes.
- Blend butter and sour cream together.
- Layer grated potatoes in a baking dish, alternating with cream of chicken or mushroom soup and the butter-sour cream mixture.
- Optionally, add a little chopped onion between layers.
- Cover the top with crushed cornflakes and dot with small pieces of butter.
