Ingredients

  • 6 large potatoes
  • 1/2 cup butter
  • 2 cups sour cream
  • 1 can cream of chicken or mushroom soup

Instructions

  1. Cook potatoes in skins until tender; chill well for easier grating.
  2. Peel and grate the cooled potatoes; set aside.
  3. Sprinkle a little salt over the grated potatoes.
  4. Blend butter and sour cream together.
  5. Layer grated potatoes in a baking dish, alternating with cream of chicken or mushroom soup and the butter-sour cream mixture.
  6. Optionally, add a little chopped onion between layers.
  7. Cover the top with crushed cornflakes and dot with small pieces of butter.
  8. Bake at 350°F (175°C) for 45 minutes until golden and bubbly.
