Ingredients

  • 1 1/2 lb. yellow squash
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 2 small onions, chopped
  • 1 small jar pimentos
  • 4 carrots, grated
  • 1 stick butter or margarine, melted
  • 1 package Pepperidge Farm dressing

Instructions

  1. Cook the yellow squash, drain, and mash.
  2. Add the mashed squash, cream of chicken soup, sour cream, chopped onions, pimentos, grated carrots, and the dressing to a mixing bowl and combine well.
  3. Pour the mixture into a buttered casserole dish.
  4. Mix melted butter with the remaining dressing and spread over the top of the casserole.
  5. Sprinkle additional dressing or crumbs over the top as desired.
  6. Bake in a 350°F oven for 35 minutes until heated through and golden on top.
