- Cook the yellow squash, drain, and mash.
- Add the mashed squash, cream of chicken soup, sour cream, chopped onions, pimentos, grated carrots, and the dressing to a mixing bowl and combine well.
- Pour the mixture into a buttered casserole dish.
- Mix melted butter with the remaining dressing and spread over the top of the casserole.
- Sprinkle additional dressing or crumbs over the top as desired.
