Pork Amandine features tender pork tenderloin slices coated with almonds and a zesty lemon butter sauce, perfect for a sophisticated yet simple dinner option.

Ingredients

  • 1 lb. pork tenderloin
  • 1/4 c. slivered almonds
  • salt and pepper to taste
  • 1/4 c. butter
  • 1/4 c. flour
  • 1 Tbsp. lemon juice

Instructions

  1. Place each pork tenderloin piece between two pieces of plastic wrap and gently press to 1/8-inch thickness.
  2. Set aside.
  3. In a skillet, melt butter over medium heat.
  4. Dredge the pork slices in flour, then cook in the skillet until browned and cooked through.
  5. Add lemon juice to the skillet and stir to combine.
  6. Sprinkle slivered almonds over the pork and cook until almonds are toasted.
  7. Serve hot with the almond and lemon sauce.
