Pork Dijon

Ingredients

  • 1 lb. lean pork
  • salt, pepper and flour
  • 2 1/2 Tbsp. margarine
  • 1/4 c. cider vinegar
  • 3/4 c. cream
  • 1/6 c. Dijon mustard

Instructions

  1. Trim pork; slice into 2-inch wide pieces.
  2. Flatten with a mallet.
  3. Coat pork with mix of flour, salt and pepper.
  4. Fry in 1 1/2 tablespoons margarine.
  5. Add cider vinegar to pan dregs; cook down.
  6. Add cream; simmer for 15 minutes.
  7. Add mustard and remaining 1 tablespoon margarine.
  8. Cook 2 minutes.
