Pork Marsala

Ingredients

  • 2 lb. pork (1/4-inch thick), then pounded thin
  • 3 Tbsp. olive oil
  • 1/2 red onion, finely diced
  • 3 Tbsp. minced garlic
  • 1 (10 3/4 oz.) can beef broth
  • 1 (10 3/4 oz.) can chicken broth
  • 1 Tbsp. basil
  • 1 Tbsp. oregano
  • 1/2 c. Marsala wine

Instructions

  1. Heat oil on high heat.
  2. Brown and remove pork.
  3. Reduce to medium heat.
  4. Add onion and cook 5 minutes.
  5. Add garlic; cook 2 minutes.
  6. Stir in broth.
  7. Bring to boil and then reduce heat to simmer.
  8. Reduce liquid by a 1/4.
  9. Add basil, oregano, salt and pepper to taste.
  10. Put pork into broth.
  11. Add wine.
  12. Cover and simmer until pork is tender (about 1 1/2 hours).
