Ingredients

  • 2 lb. pink beans
  • ham hock
  • 2 (14 1/2 oz.) cans Mexican stewed tomatoes
  • 1 (8 oz.) can tomato sauce
  • 2 large onions
  • 1 Tbsp. salt
  • 1/2 to 1 cup sugar

Instructions

  1. Soak the pink beans overnight or parboil them with a teaspoon of soda, then rinse thoroughly.
  2. Mix the soaked or parboiled beans with ham hock, Mexican stewed tomatoes, tomato sauce, chopped onions, salt, and sugar.
  3. Cook the mixture slowly for several hours until the beans are tender and flavors meld.
