Ingredients

  • 1 lb. bacon
  • 2 1/2 lb. tomatoes
  • 4 or 5 eggs

Instructions

  1. Cook bacon in a 10-inch skillet until crispy.
  2. Remove bacon from the skillet and pour off excess grease.
  3. Chop tomatoes into small pieces.
  4. Add chopped tomatoes to the skillet and simmer until they are stewed and have released lots of liquid.
  5. Add cooked bacon to the tomatoes and mix together.
  6. Poach eggs in the tomato and bacon mixture.
  7. Let some of the liquid cook off as the eggs are cooking.
  8. When the eggs are firm, cut through all sections and serve on toast.
