Ingredients

  • about 2 lb. fresh pork liver
  • about 1 lb. pork (lean and fat, mixed)
  • 1 Tbsp. salt
  • poultry seasoning or sage to taste

Instructions

  1. Cook the pork liver and meat until very tender.
  2. Cool and then mash or grind the cooked mixture.
  3. Return the mashed or ground mixture to heat.
  4. Add salt and poultry seasoning or sage to taste.
  5. Boil the mixture, adding enough meal (cornmeal or similar) to thicken very thin batter or mixture.
  6. Cook for about 5 minutes until thickened.
