  • 3 medium onions
  • 2 (2 lb.) cans peeled tomatoes
  • 1 can tomato paste

Instructions

  1. Start a pound or so of hot, smoked stuffed sausage in a quart of water and simmer.
  2. Add shrimp and crabmeat to the seafood mixture.
  3. Dice celery, bell peppers, and onions.
  4. Fry the diced vegetables in bacon fat over low heat until done but not browned.
  5. Add the fried vegetables to the seafood mixture and continue simmering.
  6. Add peeled tomatoes and tomato paste to the mixture.
  7. In bacon fat, brown four heaping tablespoons of flour until very, very brown to make a roux.
  8. Carefully add the roux to the simmering mixture to avoid excessive steaming.
  9. Add one tablespoon of powdered gumbo file and taste.
  10. Adjust seasoning with more file and/or salt to taste.
  11. Serve the gumbo in large bowls over fluffy white rice.
