A delightful combination of sweet mashed potatoes and shredded coconut, coated in rich chocolate, perfect for satisfying dessert cravings and appealing to coconut and chocolate lovers.

Ingredients

  • 3/4 cup mashed potatoes
  • 16 ounces powdered sugar
  • 4 cups flaked coconut
  • 1 teaspoon almond extract
  • 2 pounds chocolate pieces
  • 1 pound paraffin

Instructions

  1. Mix the mashed potatoes, powdered sugar, shredded coconut, and almond extract together until well combined.
  2. Drop heaping teaspoonfuls of the mixture onto waxed paper.
  3. Roll each drop into a ball shape.
  4. Chill the balls for 30 minutes to 1 hour or until firm.
  5. Melt the chocolate and paraffin together until smooth.
  6. Dip each coconut potato ball into the melted chocolate mixture to coat.
  7. Place the coated candies on waxed paper and allow to set.
