Potato Curry

A hearty Indian-style potato curry with fragrant spices and green peppers, perfect for a flavorful vegetarian meal suitable for lunch or dinner.

Ingredients

  • 4 large potatoes
  • 2 medium onions
  • 2 hot green peppers
  • 1 tsp mustard seed
  • 2 tsp urad dhal
  • 2 Tbsp vegetable oil
  • 1 tsp turmeric powder
  • salt to taste

Instructions

  1. Cut potatoes into halves and boil them for 15 minutes, or pressure cook until tender.
  2. Remove skin from the cooked potatoes.
  3. Cut potatoes into small (1/3-inch) pieces.
  4. Heat vegetable oil in a frying pan.
  5. Add mustard seed and urad dhal to the hot oil.
  6. Fry urad dhal until brown, about 30 seconds.
  7. Brown the chopped onions in the pan.
  8. Add green peppers, tomatoes, and the cooked potatoes.
  9. Add turmeric powder and salt to taste.
  10. Stir all ingredients together and simmer for 2 minutes.
  11. Serve hot.
