Ingredients

  • 1 1/2 cups lukewarm milk
  • 1 cup unseasoned mashed potatoes
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 2 packets yeast
  • 1/4 cup soft shortening
  • 4 to 4 1/2 cups all-purpose flour

Instructions

  1. Mix in a large mixing bowl the mashed potatoes, sugar, salt, and shortening.
  2. Dissolve the yeast in lukewarm milk and add it to the other ingredients.
  3. Gradually add the flour and mix thoroughly, preferably using a mixer with a dough hook.
  4. Let the dough rise in the bowl for 10 minutes.
  5. Turn the dough out onto a floured board.
  6. Roll out the dough and cut into biscuit-sized pieces.
  7. Place the cut dough into a greased pan.
  8. Let the dough rise for 30 minutes.
  9. Bake in a preheated oven at 400°F for 10 minutes until light brown.
  10. Brush the baked rolls with butter before serving.
