Ingredients

  • 1 c. blanched trimmed green beans
  • 6 oz. cooked red potatoes, cubed
  • 1 sliced hard-cooked large egg
  • 1/2 tsp. vegetable oil
  • 1/4 c. thinly sliced red onion, separated into rings
  • 1/2 c. apple juice
  • 1/4 tsp. Dijon mustard
  • 1 tsp. cornstarch (dissolved in 1 Tbsp. water)
  • 1/2 tsp. poppy seed

Instructions

  1. In medium bowl, combine beans, potatoes and egg; set aside.
