Ingredients

  • 2 (6 oz.) baking potatoes
  • vegetable cooking spray
  • 2 Tbsp. Italian salad dressing, oil-free
  • 2 tsp. salt-free herb and seasoning blend

Instructions

  1. Scrub potatoes and coat with cooking spray; bake at 400° F for 1 hour or until done.
  2. Allow potatoes to cool.
  3. Cut potatoes in half lengthwise; carefully scoop out pulp, leaving a 1/4-inch shell. (Pulp may be reserved for other uses.)
  4. Cut shells into 5 strips, each about 1/2 inch wide.
  5. Place strips skin side down on a baking sheet.
  6. Brush with Italian salad dressing; sprinkle with herb and seasoning blend.
  7. Broil 6 inches from heat for 5 minutes or until browned.
  8. Serve warm.
