Craving a savory snack with crispy shells, gooey cheese, and smoky bacon? Potato skins are perfect for sharing at parties or as a comforting appetizer. Crispy on the outside, tender on the inside, topped with cheese and bacon, served with a side of sour cream for dipping.

Ingredients

  • 3 medium baking potatoes
  • 1 cup shredded Cheddar cheese
  • 6 slices bacon
  • oil for deep frying
  • sour cream

Instructions

  1. Scrub potatoes thoroughly and rub skins with oil.
  2. Bake at 400°F for 1 hour or until done.
  3. Cool potatoes.
  4. Cut potatoes in half lengthwise. Carefully scoop out pulp, leaving a 1/4 to 1/8-inch shell.
  5. Reserve pulp for mashed potatoes or other uses.
  6. Deep fry shells in oil for 2 minutes until light brown.
  7. Drain on paper towels.
  8. Place shells on a baking sheet; sprinkle with shredded Cheddar cheese and crumbled bacon.
  9. Place under broiler until cheese melts.
  10. Serve with sour cream.
