- Scrub potatoes thoroughly and rub skins with oil.
- Bake at 400°F for 1 hour or until done.
- Cool potatoes.
- Cut potatoes in half lengthwise. Carefully scoop out pulp, leaving a 1/4 to 1/8-inch shell.
- Reserve pulp for mashed potatoes or other uses.
- Deep fry shells in oil for 2 minutes until light brown.
- Drain on paper towels.
- Place shells on a baking sheet; sprinkle with shredded Cheddar cheese and crumbled bacon.
- Place under broiler until cheese melts.
- Serve with sour cream.
