Ingredients

  • 4 large baking potatoes
  • 2/3 cup margarine
  • 2/3 cup all-purpose flour
  • 6 cups milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 green onions, chopped
  • 12 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 1 (8 oz) carton sour cream

Instructions

  1. Wash the potatoes and bake in a conventional oven at 400°F for 1 hour or until done.
  2. Cut the potatoes in half lengthwise and scoop out the pulp.
  3. Melt the margarine in a heavy saucepan over low heat.
  4. Add all-purpose flour, stirring until smooth.
  5. Cook for 1 minute, stirring constantly until the mixture is thick and bubbly.
  6. Add the potato pulp, salt, black pepper, green onions, 1/2 cup of crumbled bacon, and shredded cheddar cheese.
  7. Cook until heated through.
  8. Stir in sour cream.
  9. Add extra milk if necessary to reach desired thickness.
  10. Garnish with chopped green onions, bacon, and cheese before serving.
