Creamy, cheesy potatoes with green onions, perfect as a comforting side dish for family dinners or gatherings, featuring tender potatoes layered with Velveeta and fresh herbs.

Ingredients

  • 4 lb. small red potatoes
  • 1 lb. grated Velveeta cheese
  • 1 cube margarine
  • 1 c. chopped green onions
  • salt

Instructions

  1. Boil or steam the potatoes until tender.
  2. Let the potatoes cool slightly, then cut into quarters or small pieces while leaving the skins on.
  3. In a 3-quart casserole dish, layer a portion of the potatoes on the bottom.
  4. Dot the potatoes with slices of margarine.
  5. Sprinkle with part of the grated Velveeta cheese, chopped green onions, salt, and pepper.
  6. Repeat the layering process until all ingredients are used.
  7. Cover the dish and bake at 350°F for 30 minutes.
