Ingredients

  • 4 medium yams
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1/4 cup melted oleo
  • 2 eggs
  • 2 tablespoons melted oleo

Instructions

  1. Cook yams in microwave or on stove until tender.
  2. Peel and mash yams in a large bowl.
  3. Beat in eggs, 1/4 cup of brown sugar, 2 tablespoons of melted oleo, and salt.
  4. Spoon mixture into a 1-quart buttered casserole.
  5. Arrange pecan halves over the top.
  6. Sprinkle with remaining brown sugar and drizzle 1/4 cup melted oleo on top.
  7. Bake uncovered at 375°F for 20 minutes.
