Ingredients

  • 1 lb. cubed pork or veal
  • 2 cloves garlic
  • 3 Tbsp. butter
  • allspice
  • red pepper
  • 20 to 30 pearl onions
  • 1 Tbsp. vinegar
  • salt and pepper
  • cinnamon

Instructions

  1. Brown cubes in butter.
  2. Add garlic and pearl onions; brown again with meat for 5 to 8 minutes.
  3. Add peppers (red and black); paprika can be substituted if you don't want it spicy.
  4. Add allspice, cinnamon, salt and 4 cups of water.
  5. (All spices are by taste, vary amounts as needed.)
  6. Cook for 3 hours over medium-low heat until meat is very tender.
