  • 5 Tbsp. butter
  • 2 1/2 c. milk
  • 1/2 c. half and half
  • 1/2 c. brown sugar
  • 2 1/2 Tbsp. cornstarch
  • 1/4 c. sugar
  • dash of salt
  • 2 tsp. vanilla
  • 2/3 c. pineapple tidbits

Instructions

  1. Use a heavy pot, either medium or large.
  2. Put everything in, except the vanilla and fruit.
  3. Cook on medium-high heat until thick, stirring constantly with a whisk.
  4. Take off heat and stir in the vanilla and pineapple tidbits.
  5. Pour into a bowl and chill for about 2 hours before serving.

Tips & Substitutions

For a richer flavor, try using unsalted butter and a high-quality vanilla extract. You can substitute the pineapple tidbits with other fruits like peaches or berries for a different twist. If you prefer a thicker pudding, increase the cornstarch by a tablespoon. Always whisk constantly to prevent lumps and ensure a smooth texture.

Serving Suggestions

Serve chilled in individual bowls or cups, and consider garnishing with whipped cream or a sprinkle of toasted coconut for added texture. This pudding pairs beautifully with No-Fat Pineapple Muffins for a delightful brunch. For a more decadent treat, serve alongside Mamie Eisenhower's Frosted Mint Delight for a refreshing contrast.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. To reheat, gently warm in the microwave, stirring occasionally to maintain a creamy consistency. If the pudding thickens too much upon cooling, adding a splash of milk while reheating can help restore its original texture.

Frequently Asked Questions

Can I use a different type of milk?

Yes, you can substitute any milk alternative, such as almond or oat milk, but this may slightly alter the taste and texture. Keep in mind that using whole milk will create a creamier pudding, while low-fat options may yield a lighter result.

Is it possible to make this pudding dairy-free?

Absolutely! You can use coconut milk and a dairy-free half and half to create a delicious dairy-free version. Ensure that the butter is replaced with a plant-based alternative for a completely dairy-free treat. Just make sure to adjust the sweetness as needed.

How can I make this pudding more flavorful?

To enhance the flavor, consider adding a pinch of cinnamon or a splash of coconut extract along with the vanilla. You can also experiment with different fruit combinations, or even try mixing in some chocolate chips for a decadent variation!
