Ingredients

  • 1 small pumpkin shell
  • 2 cups peeled chopped apples
  • 1 cup raisins
  • 1 cup chopped pecans
  • 1/3 cup sugar
  • 1 teaspoon lemon juice
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat oven to 350°F.
  2. Wash and dry the pumpkin, approximately 7 inches in diameter.
  3. Fill the pumpkin with two parts peeled chopped apples, one part raisins, and one part chopped pecans.
  4. Add sugar to taste, then add lemon juice, cinnamon, and nutmeg. Mix well.
  5. Place the lid back on the pumpkin.
  6. Place the pumpkin on a cookie sheet.
  7. Bake until the apples are tender, beginning to check after 40 minutes.
  8. Cooking may take up to 1 hour and 45 minutes.
  9. Serve hot or cold, spooning from the shell with some pumpkin with each portion.
  10. Top with sour cream if desired.
