Pumpkin Shell Casserole

Instructions
- Preheat oven to 350°F.
- Wash and dry the pumpkin, approximately 7 inches in diameter.
- Fill the pumpkin with two parts peeled chopped apples, one part raisins, and one part chopped pecans.
- Add sugar to taste, then add lemon juice, cinnamon, and nutmeg. Mix well.
- Place the lid back on the pumpkin.
- Place the pumpkin on a cookie sheet.
- Bake until the apples are tender, beginning to check after 40 minutes.
- Cooking may take up to 1 hour and 45 minutes.
- Serve hot or cold, spooning from the shell with some pumpkin with each portion.
- Top with sour cream if desired.
