Ingredients

  • 4 c. flour
  • 1 egg
  • 1 3/4 c. warm water
  • 1/2 tsp. salt

Instructions

  1. Combine warm water, egg, and salt and add to 3 cups of flour.
  2. Mix well; add and knead in the fourth cup of flour until smooth and elastic.
  3. Brush the dough with oil and set aside for 15 minutes.
  4. Roll out the dough as for pie crust and cut with a round cookie cutter.
  5. Place the round on the palm of your hand.
  6. Put a spoonful of filling on it; fold over to make a half circle.
  7. Press the edges together with your fingers, ensuring the edges are free of filling.
  8. Seal the edges well to prevent filling from escaping.
  9. Place the pyrophy on a tea towel, side by side, without touching each other.
  10. Cover with another tea towel to keep them from drying out.
  11. Drop into salted boiling water and stir with a wooden spoon to prevent sticking; boil for 4 to 5 minutes.
  12. Drain in a colander and pour 1 cup of cold water over them.
  13. Drain again; place in a bowl sprinkled with oil and toss gently to coat evenly.
