Ingredients

  • potato
  • liquid (clam liquid)
  • clams
  • garlic butter
  • onion
  • white pepper
  • salt pork

Instructions

  1. Drain the clams, reserving the liquid to be used later.
  2. In a soup pot, cook the salt pork until crisp.
  3. Add the onion and cook until tender but not browned.
  4. Add the clam liquid (reserved from the clams) and water, then add the potatoes.
  5. Cook until potatoes are fork tender but not mushy.
  6. Add the butter and the clams.
  7. Bring the mixture to a boil and immediately reduce the heat.
  8. Gradually add half & half to the chowder.
  9. Cook over low heat until the chowder thickens slightly.
