Quick And Simple Squash Soup

Ingredients

  • 2 small Squash, diced
  • 4 green apples, diced
  • 2 red bell peppers, diced
  • 2 small white onions, cut thinly
  • 6tbs tbs of butter
  • 6tbs of plain yogurt

Instructions

  1. Just covered with water, bring the Squash to a boil and allow to boil until cooked through. While the squash cooks, melt butter in a pan on medium-high heat and add the bell peppers and onions. After about 3minutes add the apples to the pepper-onion mix.
  2. Cook the mixture until apples and peppers are softened. Strain squash, reserving the water, add squash to mixture. Add nutmeg, cloves, cinnamon, salt and pepper to taste (about 2tsp of each, 1tsp of cloves).
  3. Once cooked, put in blender and add a small portion of the reserved water. Puree until almost smooth. Stir in yogurt and serve.
