Ingredients

  • 1 cup vanilla ice cream, softened
  • 1 cup self rising flour
  • 1 cup fresh or frozen blueberries
  • 1 tbsp butter or margarine, melted
  • 2 tbsp sugar

Instructions

  1. In a medium bowl, mix the softened vanilla ice cream and self-rising flour until combined.
  2. Add the melted butter and sugar, folding them into the mixture.
  3. Gently fold in the blueberries until evenly distributed.
  4. Spoon the batter into six or eight muffin cups.
  5. Bake in a preheated oven at 375°F (190°C) for about 20 minutes or until golden brown.
