Quick Chili Rice

Ingredients

  • 1 lb. ground beef
  • 1/3 c. onion, chopped
  • 1 Tbsp. chili powder
  • 1/2 tsp. dry mustard
  • 1 c. rice (uncooked)
  • 1 can corn, drained
  • 1 c. diced green pepper
  • 1 can tomato sauce
  • 1/2 c. water
  • 1/2 c. shredded cheese

Instructions

  1. Brown beef and onion.
  2. Add spices, corn, green pepper, tomato sauce and water.
  3. Cover; bring to a boil, stirring occasionally. Stir in rice.
  4. Reduce heat; cover and simmer for 5 minutes. Sprinkle with cheese; serve.
  5. Goes well with side salad with Ranch dressing and hot corn bread.
