Quick crepes with fruity filling and a touch of sweetness, perfect for breakfast or dessert. Light, tender, and customizable with your favorite fruit toppings.

Ingredients

  • commercial pancake mix
  • 2 cans fruit pie filling
  • 1 stick margarine or butter
  • 1 cup sugar

Instructions

  1. Mix the commercial pancake mix in a large bowl, using 1/4 to 1/8 cup more liquid than called for in the instructions.
  2. Grease a large cast-iron frypan with margarine or butter and set on medium heat.
  3. Ladle or spoon 1 large pancake batter onto the heated pan.
  4. As the cake sets and bubbles break, sprinkle 1 teaspoon of sugar onto the uncooked side.
  5. Turn the crepe over.
  6. Place 1 to 2 teaspoons of fruit filling onto 1/2 of the cooked side.
  7. Wait 10 seconds.
  8. Fold the crepe in half.
  9. Turn the crepe twice to cook evenly.
  10. Serve immediately.
