Quick & Easy Black Bean Soup
Ingredients
- 1 cup onion, chopped ⓘ
- 3/4 cup celery, chopped ⓘ
- 2 teaspoons garlic, minced ⓘ
- 1 (15 ounce) can black beans, drained and rinsed ⓘ
- 1 (15 ounce) can refried black beans ⓘ
- 1 (15 ounce) can diced tomatoes and green chilies ⓘ
- 1/2 cup mild thick & chunky salsa ⓘ
- 1 1/2 cups beef stock ⓘ
- 1 1/2 teaspoons cumin
Instructions
- Combine all ingredients in a pot, bring to a boil on medium high heat.
- Reduce heat to a simmer and cook for 25 minutes or until vegetables are tender.
