Quick Fix Banana Nut Bread

Ingredients

  • 1 c. sugar
  • 3/4 c. milk
  • 1 tsp. salt
  • 2 tsp. shortening or 2 Tbsp. applesauce
  • 1 egg
  • 3 1/2 tsp. baking powder
  • 3 c. plain flour
  • 3/4 c. chopped nuts
  • 1 to 2 bananas

Instructions

  1. In a blender, put banana(s), shortening, egg, baking powder, salt and milk.
  2. Pour into a mixing bowl; gradually add flour.
  3. Add nuts.
  4. Pour into a greased loaf pan.
  5. It is best if you let set for 15 to 20 minutes before baking.
  6. Bake at 350° for about 1 hour and 10 minutes.
  7. It is done when top is dry and cracked.
  8. Remove from pan onto a cooling rack.
  9. Let cool before cutting.
