Ingredients

  • 5 or 6 medium potatoes
  • 4 slices bacon
  • 2/3 cup chopped onion
  • 1 can cream of celery soup
  • 3 tablespoons vinegar
  • 1 tablespoon pimento

Instructions

  1. Cube the boiled potatoes.
  2. Cut the bacon into 1/4-inch strips and cook until crisp.
  3. Add chopped onion to the bacon and cook until tender.
  4. Stir in the cream of celery soup, vinegar, and chopped pimento, and mix well.
  5. Pour the mixture over the cubed potatoes and mix thoroughly.
  6. Reheat in the oven at serving time.
